Ingredients
1 cup unbleached all-purpose GF flour
1/2 cup Go to Glow Cacao
1 teaspoon (5 ml) baking powder
1 teaspoon (5 ml) baking soda
3/4 cups walnuts (or nuts of your choice)
1 1/4 cups (310 ml) mashed ripe bananas (3-4 bananas)
2 extra bananas sliced on their length
1/2 cup (125 ml) coconut milk (or greek yogurt)
1 tablespoon (15 ml) lime juice
1/2 cup (115 g) coconut oil or unsalted butter, softened
1 cup (210 g) coconut sugar (or 1/2 sugar and 1/2 protein powder)
1 egg
1 teaspoon (5 ml) vanilla extract
Instructions
With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter a 23 x 13-cm (9 x 5-inch) loaf pan (a 1.5-litre (6-cup) capacity pan) and line with a strip of parchment paper, letting it hang over both sides.
In a bowl, combine the cacao, flour, baking soda, baking powder, nuts and optional protein powder together. Set aside.
In another bowl, combine bananas, coconut milk and lime juice. Set aside.
In a third bowl, blend butter and sugar together. Add egg and vanilla and beat until smooth. Add dry ingredients alternately with banana mixture.
Pour into the loaf pan. Add the two sliced bananas with the center facing up. Bake for about 1 hour or until a toothpick inserted in the centre of the cake comes out clean.
Let cool on a wire rack before removing from the pan and slicing — eat with abundant butter, maple syrup and/or nut butter for extra delight! ✨
